Working mum, get home late - what to do about dinner

Can I ask what do some of you mothers do when you get home late and you need to feed the family? Need some ideas apart from getting take aways which we often do or having toasted sandwiches. i never have time to prepare things on the weekend....

where do you buy the mince for the bolognaise? i dont like the pure beef mince you can mix two different kinds of minced meat together yourself. I haven't seen mixed-meat mince for sale here. I use OEB organic beef mince along with Al Khazna veal bacon for bolognaise.

I do most of my planning, cooking and prepping on Saturday. I make curries, store in individual container (portion size,just enough for day) and freeze them. I make tomato sauce for pasta in large quantities and freeze them. I prepare vegetable patties, breaded chicken and meatballs, on a weekend, and freeze them in bags. (They are exactly like the frozen stuff you get in the supermarket and much better as you know what goes in it). And all the cooking required for the day I finish it early in the morning. I get home past seven and have early dinner. Cooking in the morning, gives me time to relax in the evening and spend time with my child.

Silvstet, I like your idea of the soup with bread. I will definitely use it, especially as the weather gets cooler. Fish fillet is also quick and easy to prepare. Either put it in a foil parcel in the oven with some herbs or cook it in the pan with a little bit of oil or butter. Boil some rice with saffron for some colour, add frozen mix veg. I bought a rice cooker; takes about 30 minutes or less for the rice to be ready, all without me having to check constantly. Steak and lamb chops are both also quick to prepare (marinate the chops in the morning and leave in the fridge). Have with mash potatoes and a salad. Make extra steak and you can use leftovers another night for a steak sandwich or cut it up and make a stir fry with noodles (or rice) and veggies. I use the website bbcgoodfood for quick recipe ideas.

As a fellow working mum, here are some of my tips: What I find helpful is to sit down on Saturday morning and make a menu for the week. That way I do not get home during the week thinking "oh dear, what do I cook today?" We have takeaway once a week. Before I leave in the morning, I take out the meat from the freezer for the evening. When I am making one meal, since I know what I am making tomorrow evening I sometimes do the prep. For example, this evening, we are having pasta with sausages. Yesterday evening, I put the sausages and garlic with a drizzle of olive oil in the oven. Once cooled they went in the fridge. This evening, all I need to do is boil the pasta, cut up the sausages, make the tomato sauce to go with it (using the garlic roasted yesterday), make a salad, and I am done :-) If I make a curry or a bolognaise sauce, I make extra and freeze. If I am making roast chicken, I keep some to make a risotto later in the week. I buy the pies from Spinneys (steak and kidney/chicken and mushroom, etc) and freeze them. It is easy to put them in the oven, with some frozen chips and [i'>voila[/i'> pie and chips and add a salad :) Hope these help.

Don't know if something like this is an option but I am a working mum, and a few of my friends who are working mums get together once every 2 weeks with babies to all cook at that person's house. Everyone cooks something different and we all leave with a portion of the others' food, so we have something different for 4 evenings (often lasts even longer depending on what it is). It gives us time to socialise and catch up (because meetups are always weekday mornings!) and there are enough hands on deck to keep kids entertained while cooking.

Before moving to Dubai, I worked from 6am til 5pm and then rushed home to pick up our first child from nursery in time to feed her, put her to bed and have dinner ready for my husband and me. At least in London there was a wider range of healthy prepared foods to choose from. It was exhausting! The last thing I felt like doing when I got home was to cook dinner, no matter how quick. I'm not dissing quick recipes...they are fantastic for anyone with a busy schedule but a slow cooker is a godsend for a working mom.

soup: marrow/potatoes with cream, grilled bread with cheese,fruit red baked beans cooked in tomato(in can) at bottom of your tray then, mashed potatoes,cheese on top,cook in oven 20 min guacamole,cucumber salad,bread grilled pasta with sweet peas: half cook pasta pour them in tray with cup of milk/salt pepper/nutmeg, spread cooked peas,cover with one layer of cheese then breadcrumbs again cheese, cook for 20 min in oven. cut marrow/beans,potatoes, carrots in small cubes, cook them in coconut milk after adding little bit of hot pepper, curry, salt and pepper.serve with rice. I would definitely get a slow cooker/crock pot. You can throw ingredients in the night before or morning, turn it on when you go to work and dinner will be ready when you get home. If you get a larger size it will make enough for leftovers to freeze and there's another dinner ready. I borrowed a friend's first to see if I would use one and tried many of the recipes on this site: http://www.skinnytaste.com/2007/07/crock-pot-recipes.html If you google you will find loads more recipes. As a stay at home mom who often has a busy day without time to cook they are really useful; if I were a working mom I'd find it invaluable, especially here where there are very few healthy take away options. They are available to suit many budgets if you look around.

I cook early in the morning so that i only heat food in the evening. I wake u really early to prepare the lunchbox, put breakfast, prepare DD for school… I just prepare the food and put it on the stove as soon as i wake up and by the time the bus is here i am done with the cooking.

i go immediately from the door to the kitchen and prep the food.. then change and wash up then head to the kitchen again and start making dinner. it's tough but you get on with life. theres a lot of easy recipes out there which takes 30 to 1 hour to do. i'm making 1 pot rice and chicken tonight. very easy very straight forward. dump everything in the pot and serve with yogurt and salad.
