Recommendation for Colombo & South of Sri lanka for family holiday

There is a load of information on the net and can't make up my mind.
We'd like to stay for 2 nights or so in Colombo and explore a little north of that for some Elephant Project.
Then we'd like to head South for remaining 4-5 days.
If you have been there, what would you recommend us to:
Stay
do/don't do
Eating place
etc.
Most importantly we will need a swimming pool to keep our 6 years old entertained and burn off energy.
