Chocolate Almond Cake
Ingredients
Preparation

For the cake: Preheat the oven to 180°C

Cream together the sugar, butter and egg yolks until it is well combined

Then add the chocolate and mix for a couple of minutes

Add the ground almonds and mix until incorporated

Whisk the egg whites until the soft peak stage has been reached

Fold the egg whites into the batter

Pour the mixture into a rectangular, or round cake tin and bake for 45minutes

For the ganache: Pour the butter, the cream and the chocolate into a saucepan and bring to a quick simmer
-
Turn off the heat and stir until the chocolate has melted. Set aside

Cut the cake in half horizontally
-
Take one layer of cake and cover with the ganache just enough to cover the whole surface
-
Add another layer of cake and cover with ganache
-
Refrigerate for an hour before serving

Cut the cake into individual portions and decorate with cocoa powder and almond flakes.
