Cookies....... Help

Ok so keep in mind I'm very new at this AND not the best of bakers but I would love to make these cookies for my son's 10 football birthday.
Before I wip up a batch of dough and have it too sticky to roll and cut or too dry ( been thr many times) id welcome some advice or is this recipe solid enough to try?

Dan Lou, the cookies were just perfect so thanks. I ended up making close to 50 cookies coz the kids wanted extras for the their Music teachers etc. Frances I made some red icing and also used red sprinkles (kids and sprinkles just seem to go together) and the choco cookies looked lovely.

Frances, did you ever try your recipe? I finally tried out royal icing for my DSs birthday and was surprised how easy it was to make cute little guitars! In any case I have a lovely Chocolate Sugar Biscuit that worked really well, and was very tasty, a different option to a plain cookie which sometimes tastes like nothing. Hi Dan Lou sory i missed this post, i did not make them, he asked for cupcakes and a cake, bless him less wrk for mama. The chocolate would taste better but I wonder how the icing will look, does it stand out as much, my DD 7th bday is coming up if I'm brave enough i may give it another go :\:

It is DanLou to my resuce yet again. Thanks a lot! Yes as much as I love to bake, its always nice to have tested recipes to make sure I am going to end up with something good. Will save this for Valentines. Thanks

Sure Maple! Here it is... CHOCOLATE SUGAR COOKIES (This makes about 36 10cm cookies so feel free to halve the recipe or freeze half at the clingwrap stage) 2 and 3/4 cups plain flour 3/4 cup cocoa 1/2 tsp salt 1 tsp baking powder 1 cup (227g) unsalted butter, room temperature 1 and 3/4 cups granulated white sugar 2 large eggs 2 tsp vanilla extract Whisk together flour, cocoa, salt and baking powder. In a separate bowl mix the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each one. Add the vanilla. Then stir in the flour mixture until you have a smooth dough. Halve the mixture and wrap each in clingwrap, refrigerate for at least an hour. Preheat your oven to 180 degrees and place the rack in the centre of the oven. Prepare your tray(s) with baking paper. Flour your surface, roll out and cut shapes with your cutter, they will be about 1cm thick. They don't spread too much but give them some room. The original recipe advised to then put them in the fridge for 15 mins to chill the dough but as it was already 10pm I didn't bother and they didn't seem to spread or lose their shape. Bake cookies for about 10-12 mins or until they are firm around the edges. Remove from the oven and cool in the tray for only 5 mins until placing on a cooling rack. Frost with royal icing if desired (this was remarkably easier than I first thought, even DH helped me!). Be sure the icing dries entirely before storing (this can take several hours). Store between layers of baking paper in an airtight container where they will keep up to a week. Hope this works as well for you as it did me, normally I have to try recipe after recipe to find something I like, but was happy this first one was a "keeper"!

Thanks I have Wilton meringue powder, what do you think of the cookie recipe?Sorry, cookies are not my forte, esp not the "decorated with royal icing" kind! I stick to a very elaborate choc chip recipe, 1 tried and tested recipe for oatmeal date cookies, and recipes in "Joy of Cooking"! Even Nigella has let me down in the cookie dept, and she's usually aces in desserts. Apparently Martha Stewart's cookie recipes all come out really good, so that's a good website to investigate.

You can replace the raw egg white with meringue powder or egg white powder (Dr Oetkers in Choithrams, Wilton meringue powder in Tavola) and the recipe will still work.

I haven't checked the recipe but the idea is cute. What I would say is that once the cookies are completely finished (ie. icing on top), put them back in the oven for 20 minutes on the lowest setting so that they harden up - sometimes the icing makes them soften. I would also use a royal icing that is icing sugar/egg white and water (not milk). If you do want a cookie recipe, shout out.
