Eggplant Pizza
Ingredients
1 pita pocket
2 oz. pizza sauce
4oz. Mozarella, grated
2oz. Eggplant diced
½ tomato, diced
¼ onion, sliced

Preparation

Preheat the oven to 220°C

Spread the marinara sauce on the pita and add the remaining ingredients

Bake for 10 min. until the cheese has melted
