Fresh, freeze, cook, re-freeze

Is this possible. Back to work for me and was wondering if I buy for example fresh chicken and come home and freeze it. I then de-frost the chicken when I'm ready to cook it. After I've cooked it, say i've made a chicken curry - can I freeze the leftovers again to be defrosted at a later date?

I find frozen meals need a good few minutes on defrost before I blitz them. Last night I was starving and chucked a bowl of frozen chicken stir fry into the microwave on full blast, and when I got it out five minutes later there was a puddle of sauce bubbling away around a frozen lump of stir fry in the middle. Pre-microwave era tip from my Mum: empty the frozen stew/curry/casserole into a large saucepan add a small quantity of water, just enough to cover the pan bottom and gently warm through on the stove with the lid on. The steam works its magic all round the frozen lump without singeing the edges while an occasional stir means its heated all the way through. I always do it this way unless I'm in a tearing hurry (ie I've forgotten its suppertime) in which case it gets zapped in the mickywave.

Yes need to stir and re zap. Inability to get fork into middle of lump made stirring somewhat difficult! Back into the microwave on defrost while I gnashed my teeth :D.

Right so are you wise lot saying that I can freeze the chicken curry I made last night, (using chicken that had already been frozen?). And when i come to defrost this frozen-cooked-frozen chicken, how do I do this? By leaving in fridge to defrost, by defrosting in micro, (or can i just put on full power in micro). Yours questioningly................... :D I prefer to defrost in the fridge but you can do any of the 3 options you list safely.

promise to take note of the street. I found it by accident near Al-rigga street when I got lost avoiding traffic. It's a long street and you'll find it if you go for a drive but realistically i know thats terrible advice lol. Ok, so point noted, will note down which shop its near and the butcher shop name itself. Please let us know. There was another butcher shop that someone mentioned near Mercato Mall gosh if I only wrote it down.

If you feel the need to cook, freeze, and defrost in a hurry - try poaching the chicken and freezing it. Then when you want to use it - make the sauce and put the frozen, poached chicken in the sauce to thaw, flavour and eat.

I always do this. It's the only way we eat home cooked food nearly all week. I now stuff is better frsh, but it's better to be eating something I have made full of veg than calling for takeaway at the last minute!!! :cool:

Please tell me where the butchers is located, i never knew they exsisted here, i thought you could only get meat from the supermarkets.

yes - I'm pretty sure that most supermarkets sell frozen/defrosted chicken you can't freeze. It probably took me 6 months to find a butcher. I buy fresh chicken from this butcher just so I can freeze it. OH and the skin it for me - i hate skin - yuck! :) happy days still, the fewer times you freeze-defrost the better - both for freshness and in terms of avoiding nasties!

bear in mind though that most "fresh" meat - esp chicken - has already been frozen/defrosted, so you'd do better to buy it, cook it that day and then freeze it (if you can't eat it fresh). Make sure it's properly piping hot though before you eat it!

yes, that is fine. As long as you don't refreeze already defrosted meats without cooking. I do that all the time actually.
