I want to make this recipe and hoped one of the UK ladies could tell me what apple available here would be the best substitustion for a Cox apple. TIA :)

Braeburn is probably a good substitution, last time I saw them though they were very expensive (in spinneys).

Just get the green apples that have a red flush to them - the ones that don't look "perfect" and polished. Cox's are just normal eating apples - not too sweet, not too juicy and not sharp.

Not sure which apples here would best match, but Cox's Pippins are like apples you'd grow in your own orchard..... crisp and crunchy, not too sweet. Probably no help at all.......
