Visa run at end of contract

Hoping someone can clarify or point me in the right direction of who to call to find out!

My current contract has come to an end and my residence visa has been cancelled. I have received from my current employer my cancellation certificate etc and have until 19th July to exit Dubai.

I have a new job starting in September (have the contract and official salary certificate stating so) but of course they will not be processing my new visa application until I hand in my passport to them when I start working for them on 1st September.

My plan is to exit Dubai on 16th July via Oman and come back in as a tourist as I have doctor appointments here on 10th, 19th and 23rd July which I cannot miss. I will then leave Dubai again on July 27th for a further month to the uk before returning again for a September 1st start with my new employers.

I heard from someone that I am not allowed to exit via oman and that I need to actually 'fly' out of Dubai. Is this true? I was under the impression that as long as I leave dubai within my 30 day grace period then it doesn't matter how I choose to do it, flying from dubai or going to Oman.

I was also told that someone from your current employer needs to 'escort' me to the airport as he needs to stamp something on my passport? I have left Dubai once before years ago at the end of my contract and I went to the airport on my own...

Hopefully someone can advise as I really can't fly out of dubai before July 27th but can easily exit at oman within my 30 day grace period.
