Choco-Mint Icing Cupcakes


4oz. butter, soft
7oz. castor sugar
½ tsp. peppermint essence
1 tsp. green food colouring
1 slab dark mint chocolate broken up into smaller pieces


  • Cream the butter and sugar until a fluffy texture is reached
  • Add the peppermint and mix it in
  • Add the food colouring until you have a light green colour
  • Ice your cupcakes and decorate them with pieces of dark mint chocolate.
