Tom Yam Soup

Ingredients
Preparation

Remove the shells from the prawns and put the prawns to one side

Heat oil in the pot and fry the shells for a minute. Add the water and bring to boil. Reduce to a simmer for 5 minutes. Strain and discard the shells

Return the water to the stove and add the lemon grass, lime leaves and ginger and simmer for 5 minutes. Add the chili and mushroom and simmer for an additional 5 minutes

Add the prawns and remove from heat after 30 seconds, the prawns will continue cooking in the hot water. Stir in the fish sauce, lime juice and nam prig pow. Serve in separate bowls

Garnish with plenty of coriander.
