BBQ Veggie Skewers

BBQ Veggie Skewers


1 pineapple - cubed
2 shallots - quartered
12 cherry tomatoes
1 packet Button mushrooms
2 zucchinis - sliced thickly
1 red bell pepper - cubed
5 tbsp olive oil
2 tbsp dried basil
2 tbsp dried oregano
Salt and pepper


  • Thread the vegetables onto soaked skewers alternating between the vegetables.
  • In a bowl combine the oil, herbs and seasoning.
  • Brush the vegetables with the oil marinade.
  • Grill the vegetables turning them occasionally and brushing with the marinade as needed.
  • Grill for 10 minutes or until the veggies are tender.
