Bruschetta

Ingredients

2 tomatoes, diced
1 shallot, diced
handful of chopped fresh basil
6 tsp. chopped fresh parsley
1 fl oz. olive oil
1oz. grated parmesan cheese
1 sliced Italian bread

Preparation

  • Preheat the oven to 200°C
  • In a bowl mix the tomatoes, shallots, herbs and olive oil
  • Put the mixture on top of the bread and sprinkle the parmesan cheese on top
  • Bake for 5-8 minutes or until the bread is crispy
  • Another great variation to this recipe is to add pesto to the tomato/shallot mixture
  • it gives it a creamier and richer taste.
