Butterscotch Marshmallow Brownies

Butterscotch Marshmallow Brownies

Ingredients

1 cup butterscotch chips
1/2 cup (4 ounces) unsalted butter
1 1/2 cups all-purpose flour
2/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon pure vanilla extract
2 eggs
2 cups miniature marshmallows
2 cups chocolate chips (milk, semi-sweet, or dark)

Preparation

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • Alternatively you can also line your pan with aluminum foil.
  • Melt butterscotch morsels and butter in a large bowl in microwave for one minute. Remove from
  • microwave and stir. Reheat in 30 second intervals, stirring after each interval until chips are
  • melted. Cool mixture to lukewarm. *You may find that the butterscotch is somewhat gelatinous
  • and won't easily combine completely with the butter. Keep stirring it will get there eventually.
  • Meanwhile, sift flour, baking powder, and salt in a medium bowl. Add the brown sugar and mix to
  • combine. Add the eggs,vanilla, and butterscotch/butter mixture, and mix to combine. Fold in the
  • marshmallows and chocolate chips. Mix well to combine.
  • Spread batter into the prepared pan. I placed a piece of waxed paper on top of the batter to
  • gently push it evenly into the pan (and so it won't stick to your hands). Bake 25 minutes. Be
  • careful not to overcook.
  • Remove from oven and allow to cool on a wire rack. Cool completely and cut into bars.
