Tabouleh with a Twist

Tabouleh with a Twist


1 ½ cups water
1 cup uncooked quinoa
1 tomato, chopped
Handful of fresh parsley, chopped
1 green onion, chopped
1oz. raisins
1 small cucumber, chopped
½ small onion, minced
1 lemon’s juice
3tsp. olive oil
Salt to taste
Black pepper to taste


  • Cook the quinoa according to packet instructions.
  • Remove from the heat and fluff with a fork. Cover and let it stand for five minutes.
  • Stir in the remaining ingredients and season.
  • Refrigerate and serve cold.
