Say hello to Middle East’s cheesecake — kanafeh. A sweet, rich, crunchy and creamy cheese pastry soaked in sweet sugary syrup. Also referred to as kunafeh, kunafah, konafa or kanafeh (it’s all the same), this heavenly pastry is traditionally made of semolina, butter, palm oil.
The pastry is then coated with soft white cheese (such as string, mozzarella), akkawi or Nabulsi. A thick syrup is poured on the pastry (made of sugar, water, a few drops of rose water and lemon juice) during the final minutes of cooking. Crushed pistachios are then sprinkled on top as a garnish — no wonder it's on top of every Arabic sweet list.
