For a 'healthy' but tasty roastie: I use 'light' olive oil. Parboil the spuds, drain, add 2 tablespoons of oil and shake with the lid on to fluff 'em up. Drain the excess liquid and put the potatoes in a preheated tray. Roast for about 45 minutes and turn til they're golden brown and crispy. Not as good as the fullfat version I'll admit but still a tasty roastie. I do something similar ,I parboil the potatoes drain, and put on a baking tray lined with foil or baking sheet smash the potatoes with a back of a bottle till just enough...And drizzle olive oil, rosemary, salt and freshly ground pepper and bake till the to is crisp. I saw this somewhere on the net been doing it ever since and I keep the skin on...yum!

Hi Rose0284, You are not alone. I to feel very frustrated with the response..though I do baked goods and birthday cakes and such it's been a real struggle. I was a regular at ARTE for a while but I've kept away for the past few month as it's been a fight to keep afloat. I've been with other fairs too but still things aren't much different. There seem to be more supply than ever a demand! Or is it people here don't care much for home made-hand made stuff? Specially since I do baked goods it's always last minute and very late nights and nothing much else to show for it...plus since I cant keep them , I have to cut my prices in half by the end of the day or just give them out free!:(

Yes, the fondant covered ones tend to sweat and make a mess out of the decoration. The best thing is to leave the decorated cake on a cool place away from direct sun light.

Well I don't think it will be a plane crash as I usually have a flash before something like that... DS asked me last night how I was sure that the world will not end today. Oh my, this is something to think about. Well the jam bottles expiry date says March 2013...... So there.....world is not ending....at least not before that!

The problem won't be in the fridge,my worry would be out of the fridge if it starts sweating....I usually leave it outside under the AC and it's perfectly ok and moist.

You can bake the cake the night before and wrap in cling wrap after it's completely cool and in the morning sandwich/fill it and crumb coat ready to be covered in fondant later on. That way the cake keeps moist without drying out also you can keep the left over cake for longer.

Carrie is absolutely right regarding Selling at ARTE. They have the licence for that day covering all vendors. And the municipality also checks on the vendors regularly for hygiene etc. So no it's not illegal selling at ARTE.
