Thanks for all the advice. I think if I can find somewhere where I can pay in 3-4 cheques I'll be fine - the loan from the company will cover the first payment and then I will make sure I'm putting away enough each month to cover the next bulk payment and the next and so on.
I had been warned that deposits for utilities can be an unexpected cost - am I really looking at £1K to get set up? If it's easier to let me know costs in AED that's fine.
