10 Sweet and Simple Pancake Fillings

Who said you can only eat pancakes on Shrove Tuesday?

Pancakes are loved by everyone, young or old. There's a 100 different ways you can eat them. Some prefer them sweet while some like them savoury.

Whatever your piece of (pan)cake, our regular contributor Liz Robb has you covered to ensure you enjoy a full stack this Shrove Tuesday!

So bring out your whips and griddle pans, make yourself a nice big stack of fluffly pancakes and let us show you 10 easy but delicious suggestions for sweet fillings or toppings to add to your traditional pancakes...

1) The Suzette

(Pictured above) The classic sweet pancake is a good squeeze of orange or lemon juice with a light dusting of caster sugar. Instead, try making a simple syrup from orange juice and sugar, filling the pancakes with slicing orange segments and drizzling the syrup on top.

2. Poached Pears and Ice Cream

Another classic dessert is pancake filled with vanilla ice cream with chocolate sauce poured over it; you can buy the sauce or easily make it yourself. Try slicing lightly poached pears into segments as a filling for the pancakes, topped with chocolate sauce and with the ice cream served on the side.

3. Banoffee Pancakes

Sliced bananas make a great filling for pancakes. Drizzle with toffee sauce for a banoffee style pancake, or add chopped nuts, hazelnuts, pecans, almonds, whatever you like, to the banana filling. Serve with a scoop of ice cream.

4. Blueberry Pancakes

Mix fresh blueberries into the batter to make a stack of blueberry pancakes, then serve with a jug of syrup made from lemon juice and sugar, and lots of whipped cream.

5. Blackberries and Caramelised Apple

For a winter warmer, gently cook blackberries and sliced apple with a little brown sugar and use to fill the pancakes. Serve with vanilla custard.

6. Berry Blast

Pancakes filled with fresh raspberries or sliced strawberries and served with a dollop of whipped cream are hard to beat. However, a compote of mixed berries, such as blueberries, redcurrants, blackcurrants and blackberries, or made just with fresh ripe cherries, is lovely with pancakes and cream.

7. Tropical Delight

Fill pancakes with slices of warm, caramelised mango and pineapple then drizzle with runny honey and serve with ice cream. For a lighter version, fill the pancakes with uncooked fruit and accompany with thick Greek yoghurt sweetened with a little honey.

8. Chocolate Pancakes

Mix cocoa powder into the batter to make chocolate pancakes then serve with whipped cream and grated dark chocolate or chocolate sprinkles.

9. Spiced Fruit and Ice Cream

Gently cook sliced apple with a little butter, brown sugar and spices such as cinnamon, ginger and cloves, to make a compote to fill pancakes. Serve with cream or ice cream and a drizzle of maple syrup.

10. Chocolate/Hazelnut Spread

The easiest option of all, loved by children, is simply pancakes spread with chocolate or hazelnut spread, drizzled with golden syrup, or spread with homemade jam if you have some.
