hi everyone! I write a baking blog and used the white chocolate spread from Le Pain Quotidien to make cookies, but you could easily substitute the speculoos?! Here's the recipe: http://pastryschooldiaries.blogspot.ae/2013/10/belgian-white-chocolate-spread-cookies.html :)

I just made a red velvet cake yesterday that called for cake flour...it used to be pretty easy to find at Safestway but I haven't seen it there in ages. It's VERY easy to make your own cake flour, and also much cheaper than buying it too. For every cup of cake flour in your recipe, measure out and remove 2 tablespoons of flour. Replace those two tablespoons with cornstarch. Whisk to combine and then sift the mixture 5 times. Cake flour should be very airy and light, so the sifting step is very important. Hope that helps!

Thanks ladies, and thank you TOLB that is what I was wondering. She doesn't have wifi in the house, the broadband is a cable and come from the wall and plugs into the CPU directly. So she would have to connect the kindle via USB every time she downloads something. So you simply download a book from amazon, then plug in your kindle and it will automatically transfer? Because my mom knows absolutely nothing about technology (although says she wants one of these things.........) she bought a lap top years ago and it has been in the box ever since because she couldn't figure out the camera lol

Does anyone know where I can find an oven thermometer. Can't seem to find it anywhere. :( I picked mine up at spinney's in the kitchen gadgets isle. Also saw the same one at Geant yesterday, but with all the baking pans/accessories

My son has also been seeing Dr. Syed at City Hospital since he was born (he's now 18 months). We love him, he's very down to earth and just lovely with our son. He also has a clinic on Al Wasl road called Kid's First. Sometimes we'll take our son there if we can't get an app at City. He gave us his mobile number to send an sms in the event we want to ask him a quick question that really doesn't require an app (something a doc would never do in the US!!!) and he always replies promptly. Good luck!

Hi Amy! Yes you are definitely correct there! I have tried with some of the recipes to include where I bought the ingredients, as it is always a hunt in Dubai. For example, I used to buy many of my baking supplies at Safestway (has lots of American imports) but then they'd be out of stock for months, so it ultimately became an unreliable resource...but will definitely keep that in mind for future posts. Thanks for the feedback by the way ;)

Hi Desi girl! I write a baking blog that might be helpful to you! I test recipes every week and include step-by-step insturction (well I do my best!) with photos so you can see how it's done. Was thinking of maybe teaching a class for beginners...let me know what you think! http://pastryschooldiaries.blogspot.com/ thanks :)

Thanks for all this great advice ladies! Sounds like the best bet would be to take a night flight and opt for the regular seats and not the bulkhead. Fingers crossed he will sleep for even a couple hours. Hope you all have un-eventful flights with your little ones this summer :) JAXUSA: bless you!!! I am so impressed you're flying with two little ones alone, makes me feel guilty for being nervous flying with just one :) all the best!!

Hi ladies...I'm planning to take a trip to the US with my son who is 15 months old. Husband has to stay here for work so we're going alone. We've flown alone together in the past but he was so tiny then and slept almost the whole way there and back. Out of experience, what is better to book? The bulkhead seats or two regualr seats? I like the idea of booking the bulkhead since he'll have room to play on the floor, but the flight is 16 hours! Not sure what to do with him when he wants to sleep since the armrests don't move up in that row. So what's better, more play room or two seats further back with moveable armrests so he can lay flat when he naps? Also any advice of what kind of toys to bring along keep him busy for 16 hours would be greatly appreciated :) thanks!

Hi Victory, the American Business Council has a party every year. We went a couple of years back and had a great time. Good for families, lots of activities for the kids and lots and lots of food. This year it's at Meydan: http://abcdubai.olasoft.com/viewEvent.html?no_header=true&productId=6779

I also delivered at City in April with Dr Yulia and it was the BEST experience ever! I was so terrified of giving birth (also my first time ever being admitted into the hospital!) but everything went perfect. The midwives there are all angels and made the whole experience awesome. Well, I had an epidural so I loved everything and everyone that day, but still LOL :) The hospital is very clean and everyone was extremely professional. All of my friends who delivered there all had the exact same experience! Best of luck to you!

she doesn't use hot water...she fills the bucket only about 1/4 of the way full, and never changes the water. All we suggested was to please use hot water, fill the bucket more, and change the water at least once or twice...I hardly call it an excuse to cry!

you know what bugs me about the maids here? When you tell them something they did wrong, even if you tell them in a constructive way, they cry. And we are not mean people! It's happened twice to us! If anything we are too flippin nice aka the pushovers. I asked my friend who has a live-in maid (we have one who comes twice a week for a couple hours) and she said her maid cries all the time too when she brings something to her attention that she did wrong, even something small like mopping the floor wrong. 'I'm sorry madam' sobsobsob If I cried everytime a boss gave me a criticism I'd never have a job...is this a defence mechanism or are they just kind of pathetic?!?

Ladies ............ you mentioned a lint/fluff trap on washer dryer??? I actually cannot find the "maintenence box" you described?? So gather there may be a few different types of machines lol as just checked manual for mine and no mention of lint/fluff removal apart from running a Freshen up programme. ;) ME NEITHER!!!! But, I think I know why...in MR there were two kinds of dryers purchased. Some apts have a separate washer and dryer (that has the lint trap) then the others have a washer/dryer combo unit (this is what we have) and the combo unit doesn't have the trap. Where the lint goes is beyond me. Still no fires yet, so I guess it's not supposed to have one? :)

Because that is taken as a personal attack or an attack on the country and unIslamic. This is how it is learn to hole your tongue, which actually is rather refreshing. Can;t bear all that Amercian/Brit swearing as everyday language, its crass. sorry I really don't think it is fair to generalize americans or the Brits for being the only people who swear, that's ridiculous and extrememly small minded of you...I've lived here 4 years and heard every type of color/background/religion swear...blame the person not the country honey!

we're in 6, so far pretty happy...but PLEASE search for the post I had earlier in the week regarding MR and the issue with the showers!! (just click on search and type marina residence, it was posted this past sunday, actually the post started with me asking for instruction manuals for the kitchen appliances, but then we got talking about the showers!) ALL the showers leak, there is a design flaw, and Nahkeel and the contractor both know about it, and are fixing the problem. It's best to have them fix it before you move in (of course won't do it unless you ask them to) they will come and replace the threshold, otherwise you will have water everywhere. You have to wait one day for the cement to dry before you can use the shower. Took them a week to come, so it's best to make the app as soon as possible! Otherwise it's a nice place to live :)

Hi, we live in Marina Res and we also have a small Yorkie...pets are allowed (even though there is a sign near the lifts that say they aren't). It's technically up to your landlord, ours didn't have a problem. The secuirty guard sees us all the time walking him and they never say anything, so hopefully you'll be okay!

Sometime similar happened to me...everything was fine until they asked me to send a photo (not a passport photo, just any photo) I said what for, they said, managment wants to see what you look like. I never returned their email...my looks have nothing to do with my job or my skills/talent! If I were applying for Miss America, okay that is one thing, but COME ON!! I say keep looking and you will find something better!!!

we were at dragon mart last weekend and I did see them there...but that place is so confusing I couldn't tell you where exactly. We were in the furniture section, so I think you'll just have to wander around a bit. But it was pretty obvious as the shop had the disco lights all over the place flashing, hard to miss :) I can't imagine any place being cheaper than DM, esp for something like that. Usually you can haggle with them a bit too...

I just bought a Phillips from Geant and once I got it home none of my dvd's from the US worked...I took it back and the guy in the electronics dept fixed it, just needed some code entered...I think this might be the case for the larger brands. Just make sure to ask before you go home from the store so you don't have to take a trip back!

DH just gave me the name and number of the guy who fixed the shower...if I'm not mistaken, he works directly for the contractor, not Nahkeel....he came to fix the shower instead of Nahkeel because I think the contractor is now liable to correct the design flaw since they are the ones who built it...although Nahkeel approved the design. My husband supplied the tiles for the bldg's so he had some insider info on all this. Anyway the guy's name is Yunus (how you pronounce that I don't know) and his number is zero five zero, two seven nine, seven three nine one (sorry I'm spelling the numbers, it seems you have to do that on here? correct me if I'm wrong). If you call Nahkeel to fix it, they will only give you the silly rubber strip so make sure to call this guy first! kmm1262 welcome to the neighborhood! If I were you, I'd have them fix the shower before you even move in if that's possible. We had to wait 24 hours after they fixed it to take a shower since the mortar had to dry. I took 'showers' in the bath tub before they came and fixed it for over a week and it was a mess, water everywhere... plus I'm pregnant so all the bending over to pick up the handheld was not so easy :) Otherwise we're pretty happy living there, I just wish the marina downstairs was a bit more lively! Everytime I go for a walk it feels like a ghostown! Last week I was walking with my DH and we passed a woman with a stroller and baby. I've got a baby bump so I smiled and said hi to her, thinking 'oh this could be a nice friend to have who also has a baby' she looked at us like we had three heads and didn't smile or say hello, nothing. Even if she didn't know english, everyone understands a smile, right?!?!? But that was the only nasty lady, everyone else has been really friendly who we chat with in the lifts :)

LOL Crystil you are too funny! Yes you are a good girl too and you shall also get a cookie LOL!!! Oh **** I can't believe there is a lint trap down there, I've been washing like mad, I can't believe that thing is still running. It must be fully loaded with lint by now, husband is going to roll his eyes at this one hahaha!!! Well our LL is enjoying her time stuck in Pakistan with my manuals and keys/cards...once she comes back I will give her a piece of my mind...untill then we're screwed. As I was saying to Laura, they did an excellent job repairing the shower (how many times can you say that in Dubai?!?) they actually installed a stone threshold, not a rubber strip. Its about 35mm high, so there is no water leaking at all. You must get them to come out and do this for you. The guy told us that they were originally just doing the rubber strip but they kept getting complaints that it still wasn't working. I will give you guys the name and number of this guy tmrw...

NO!!! Don't listen to those idiots! They told us they are fixing every single shower in the bldg...they know all about the problem and fixed it within two hours. Now its perfect and not one single drop of water comes out. Whoever you talked to is a lazy moron. I will get the number from my husband tonight of the guy who helped us. He was really great and was even early for the appointment we made to have the showers fixed. He also offered to come back if we ever needed anything around the house done, like hanging pictures/lights etc. Of course he's expecting $ but not much I'm sure. Yes, whoever designed the bldg must not realize there is such things as strollers or wheelchairs....unbelievable horrid access!!! Everytime I try to get to the pool I get lost in those back corridors...I feel like such a moron, but there are no signs to direct you!! Otherwise, great place to live LOL :) thanks in advance for the copies :)

Laura you are so sweet!!! We live in bldg 6 so we're neighbors!! Yeah I hear you about the water connection to the fridge, I don't think I'd want to drink the tap water anyway...that is a good idea to hide the big bottles in the cupboard, only thing is I have zero extra space!! The apartment we moved from had a kitchen twice the size of what we have now, so I had to get extremely creative in my 'stacking' of the tupperware :) Most of my dryers back home had a 'lint trap' that you had to clean after every use...it's the little bits of fuzz that comes off the clothes...it's so strange this dryer doesn't have one, unless it's the design and it's not meant to? If you could photo copy whatever you have I would owe you big time!! Our landlord is useless...she gave us ONE key, no access card and no key to the patio. We refused to give her agent his commission until he settles this. He doesn't know when she's coming back to dxb since she's having 'visa issues' whatever I don't care not our problem!! Don't lease an apartment if you can't supply us with the basic requirements. My husband and I have to share the access card which is a huge pain, we had to change the locks so we could each have a key (couldn't copy the original key for some reason). So things have been a mess so far...did you guys also have shower issues? They had to come and completely re-install the shower threshold since it leaked like a tidal wave...we couldn't use either shower for over a week!!! LOL sorry for my venting!!! :) If you're able to copy the manuals I will bake you something yummie, you're such a doll!

We used King Style cleaners and only had them come for 2 hrs, twice a week and there wasn't an issue with the 4 hour minimum....however they only came twice and then we quit using them....the second visit the maid spent an hour re-arranging my 'just arranged' kitchen, instead of cleaning. We didn't ask her to do this and I was beyond irked...however on the first visit when they actually cleaned they did a pretty good job. Sorry I don't have the phone number on me, but I'm sure you can google it and find them...just don't have Jane 'clean' unless you want to spend 2 days trying to find where she put everything :( <em>edited by ginabeana on 11/01/2011</em>

I must agree with Apricot...I was having a lot of baking issues when we first bought our new stove...I couldn't figure out what I was doing wrong...temp was set correctly and I didn't deviate from any of my standard recipes, but everything was still coming out hard! A friend suggested I get an internal thermometer since sometimes oven temps vary, even if it's set where you want it...I was shocked, our oven was almost 30 degrees higher than what it was set as!!!!! Now I use it every time and no more burned sweets! Good luck

Hi LJB this might seems like a stupid question but after I read your post I got confused...I am also delivering at City in April, but wouldn't my doctor be delivering the baby, not a midwife? It can also be a good idea to do your antenatal courses at the hospital where you will give birth, that way you get to meet the midwives who will be delivering you. I did mine at City and was really happy that I did. You should start thinking about it around 28 weeks, though I think I only started at about 32. Check with your insurance company, the courses might be covered, otherwise I think we paid about 2000 but I'm not totally sure. For postnatal care I saw Deborah at Cooper Clinic, can't recommend her enough!

Hi Tanya, I have a question for you...I'm from the US, so when a recipe calls for 1 or 2 sticks of butter I know what that means...but here in Dubai butter is sold by grams...100, 200, etc...this you know...so how do you convert? The 100 gram 'stick' looks like our 1/2 cup stick, but I'm sure its not equivalent....how are you resolving this with your recipes?!? By the way this recipe looks YUM but holy **** 6 sticks of butter LOL!!! Sounds like Paula Dean's heaven :)

I tried calling Nad al Sheba this morning and they never heard of Veritas! Well, the receptionist sounded like she had never heard of a lot of things, she was like a space-cake...I also asked about Caroline and they said she wasn't working there anymore and that they no longer have a behavioral specialist on staff...bummer! I tracked down Veritas email via a search on EW (sorry but is it a she or a he?...so bad of me I know, but some posts have been saying 'he' so I got confused). Hopefully he will write me back if he's still in town! Otherwise I will ask them at Safa on thursday what they reccomend we do... This pee'ing on the bed thing has been going on for a few months, but the other pee'ing issue has only happened randomly, maybe 2 or 3 times in maybe the last 6 months. We just recently moved and we constantly have people coming in and out of the house so I just thought maybe he was mixed up... anyway I will keep you posted!! Thanks for all your feedback Sue...it's really nice to talk to another pet owner about these quarky things!! If anyone hears anything about Veritas let me know!!

Really a dog whisperer??? Is she for real? Have you tried her out before? God I'd love to get inside his little pea-brain and figure out what the deal is... I also thought it might be a bladder infection because sometimes he will just stand right in front of you and pee, and he knows how bad and wrong it is beacuse he hides immediatley and slips his tail underneath him...he knows this is a big no-no, but I feel like maybe can't hold it... When he goes on his bed, he pees half on the corner, and half off...I can only usually tell he's done it if I see some on the floor. Then I touch his bed and its wet. He doesn't actually pee inside the bed, but sometime I do find a little poo in there, which is also really weird. But it's always under his pillow, like he was digging and put it there, it's never laying on top. God do we have some issues! If you say this dog whisperer might really be helpful I am totally willing to give it a go!!
