What do you want to see/do ? two weeks is not enough to see the whole country. You are better off spending your time between 2-3 states at the most. From one coast to the next takes 6 hours at least. The top states that come to my mind are : Alaska/Hawaii/California/Florida/New York. I have traveled to 25 states but only lived in a handful. In my opinion these are the "destination" states.

Do a google search. USA accepts many marriage certificates from around the world. Just get it translated and notarized. Also, unless you are applying for N400 (to be a naturalized citizen) the states doesn't ask for the marriage certificate as much as they do in the ME.

Not sure if you are still interested but I wouldn't move there unless you are 55+. It is a huge retirement area. Plus it is super super hot. Cost of living is cheap. It is safe and clean. It is a mini get away for those of us who live in SoCal. There is not much to do there.

Back in 2004, I bought a lonely planet guide to Abu Dhabi/Dubai. That helped me a lot when I visited the first few times and finally made the move couple years later after that. I'm not sure if Lonely planet still makes that tour book for that city? I know it's a tour book company but it gives you a list of things and places you would want to go depending where you live. Museums/ Parks/activities/gyms for kids and adults are listed in there, too. Get a map of abu dhabi and read it until it's worn so you know where the landmarks are. Lulu and c4 were my favorite GO TO shops.

You will meet a lot of American ladies at the coffee mornings and also amongst acquaintances once you get settled. Please please get your papers certified/notarized. We had to have our marriage certificate certified and it was dropped off at US embassy in Abu Dhabi and then it was mailed to DC and then back to here finally after a month or so. Annoying but it saves you time if done prior to move. edit: Just wanted to ask a question: What was your ultimate deciding factor(s) that made you & family make the move to UAE since California seems a lot better in many many MANY ways?! ;)
