Will anyone please share their tried and tested bbq marinades and side salads please? Hubby is bbq mad and I need some new ideas that work well! I know this will prob get moved to the food forum but I thought I'd try the main forum that sees the traffic! Thanks

Marinade for beef: Oil, lemon juice, soy sauce (a few shakes), garlic (lots), salt, pepper, chopped scallions. Can't give you proportions as I do it from eye. Just keep tasting until you are happy with the flavors (should be a slightly tangy from the lemon juice). Put marinade and meat in a food storage bag, turn bag every so often and marinade over night. Take out about an hour before grilling. You can heat the remaining marinade up and pour over the meat. I usually make this with flank steak or london broil (in the States) as you cut the meat thin sliced (neither cut can be found in the UAE).

As for side salads, I made baba ghanoush, fattoush and hummous and it seemed to work well.

I have a great marinade for ribs. Had a BBQ last week and my brother literally had the stuff all over his face! Olive oil 2 onions 4 cloves crushed garlic 2 red chillies (finely chopped) 2 tsp fennel seeds, crushed 115g dark brown sugar 100ml soy sauce 600ml ketchup black pepper Heat olive oil in a pan, add onion and garlic and fry until fragrant. Add chilli, fennel seeds and sugar until sugar's dissolved. Add soy sauce and ketchup, season with salt (if you want cos soy sauce is salty anyway) and black pepper. Take off heat and let it cool and put it in a marinade bag and stick the ribs in there. Leave it overnight and when it's grilling, keep basting the ribs with the remaining sauce. It's SOOO good!!!

Season with S+P Quarter various tomatoes (cherry, yellow cherry, plum etc) Thinly slice some shallots. Mix all together (not too much basil oil but enough to coat). Can add some juliened basil leaves if you like.

I'm rotten at side salads, but two simple marinades are: For BBQ sauce: Same quantities of tomato ketchup, maple syrup or honey and soy sauce (I use less soy sauce as I don't like the taste so much) mixed together and poured over chicken wings or thighs for a while before cooking. (For adults, I add large dashes of Tabasco and some Lea & Perrin's Worcestershire Sauce, and maybe vinegar, brown sugar, mustard and tomato puree, but the basic one is adored by children!) For citrus sauce: Lime juice, lime zest if you managed to get any juice from fresh limes (I use Jif here), grated fresh ginger, sea-salt, black pepper, fresh chopped coriander all mixed together and used as a marinade for chicken or turkey fillets.
