ShijiCecil, I use whatever wholemeal brand I can find as here in Doha it's quite limited but I used to buy one in Spinneys in Dubai. Caster sugar is simply a finer version of white sugar. For myself I actually use raw sugar, it doesn't mix in as well but I'd rather use products that are closer to nature if that makes sense. In regards to baking powder most recipes usually state how much of each, I'm not that experienced to work it out! Wuffles, apology for delay, busy day with DH birthday :) here tis... Savoury Muffins 1.5 cups grated zucchini 1/2 cup grated carrot 1 small onion, finely diced 3 eggs 1/2 cup grated cheese (lite if poss) 1/2 cup SR flour 1 tsp tomato paste 1/2 stock cube, crumbled (from a double pack) 1/2 cup skim 1 tsp each dried rosemary, basil, oregano (or whatever you've got!) 2 generous slices of ham, chopped (or turkey in my Qatar version :( ) Combine all ingredients in a bowl, mix well. Spray the 12 muffin tray with cooking spray (spread with fingers, it's really the easiest way). Divide mixture and cook in moderate 180 oven for around 20 minutes. This mixture is quite moist so you may need longer, just check with a clean knife or skewer. I like to serve these with Pumpkin Soup or Carrot Soup. Of course I love bread and butter but these are a really nutritious alternative, tasty too! You can mix up the vegies with whatever you have, just be mindful of what would cook easily (say grated pumpkin or diced mushroom) versus what may need pre-sauteeing (capsicum). I also have a delicious Herb Bread that's good with soup that I'm thinking you could do in muffins also.

apple puree, whole meal flour....sounds gr8. my further queries are : Which brand of whole meal flour do u opt for baking? wats the difference of using castor sugar and our normal white sugar. How abt the Baking powder ratio? I`ve got a tray which can make 6 muffins(med-large size).

I have Banana & Strawberry, Blueberry, Savoury ones, let me know if you'd like any of those? Btw my trick with any new recipes I'm trying is to halve the butter or oil they use, and put apple puree in its place. I also use wholemeal flour instead of white and skim milk instead of full fat. Generally you can get away with much less sugar than they add too. HTH.

Waitrose and Spinneys have a ready made muffin mix. The brand is Snowflake and you can find it in the baking aisle or near the flour. I always add a few dates and nuts and it gives it a nice taste. You can substitute Labaan for the buttermilk.
