Our family stayed at the Salisbury YMCA. Superb location, right next to the Peninsula Hotel in the heart of Kowloon (shopping and food), star ferry terminal is a 5 minutes walk. If you book well in advance, you could get the FULL HARBOUR VIEW family room. We stayed at Bishop Lei hotel...v centrally located in HK proper but atrociously small rooms.

we used silver mine hotel on one of the islands, near to the airport and disneyland. easy to get ferry into hong kong proper, or you can get loads of buses to connect with the trains which then is only 1 stop to disneyland and near to the big buddha. its only like 30 mins on the ferry, you buy a card that allows you to use any of the transport.
