Foolproof pavlova recipe 6-7 egg whites 12oz caster sugar Beat egg whites til stiff, add 12oz caster sugar and beat for up to 10 minutes til thick and glossy (much easier with electric mixer). Spoon onto a tray lined with tinfoil (greased and floured to prevent sticking). Bake at 150 deg. for one hour, then 100 deg. for half hour, turn oven off and leave to cool in oven. Do not open oven at any time during cooking.

if your bottom is burning, try putting a solid metal shelf below the shelf that you are cooking the meringue on, should disperse the heat a bit.

I've found my gas oven is off by up to 40 degrees. I have a cheap oven thermometer that I use instead of the dial.
