I'd recommend Toni & Guy in DIFC http://www.toniandguyuae.com/gallery.html I was a test model for them a few months ago when the style director came down to visit Dubai. He was very thorough in explaining how to cut so the staff are all super clued up. Have a look on their site to see if there is anything you like and they will likely know exactly how to do it that way. PS I already recently chopped all my hair off! Great for summer!
