I am a single mother moving to Dubai in Jan. Aleady have a job underway and daughter accepted in to school. Father is not on birth certificate though. Does this impose a problem with sponsarship?

This is a little late, but.. You will need to apply for a humanitarian case at immigration. But it is possible, and as long as you earn enough money and can prove you have full custody, it should be fine. There will be minimum salary requirements. You will need a letter from your embassy stating you are a single parent, and have full custody.
