Sunflower seeds....how do I harvest the seeds so I can eat them?

My sunflowers are starting to wilt and the birds are into the seeds. I want to beat them to it.
So are all sunflowers seeds edible? - they are the big, yellow kind.
Do I need to dry the seeds before I roast them?
I will also post on the gardening forum.
