Flatten between cling film Flour, egg and breadcrumb them. Fry in olive oil until golden. Make a tomato sauce by sauteeing a chopped onion in olive oil, add oregano, a tin of good tomatoes and a little stock or wine. Simmer to reduce a little. Season. Blend with stick blender til smooth or leave a little chunky if you like. Serve on top of spaghetti - italian stylie!

Sprinkle them with paprika, salt and pepper and grill them or fry them with a very little olive oil in the pan. When they're cooked, add low-fat yogurt to the pan and blend it in gently, cook on low heat till yogurt is heated through but not separated. Serve with boiled pots and veggies/salad of your choice.
