Another option would be to make skinless sausages, I used to make my own back home and found it easier to make them skinless than to fill the skins evenly even though I had a sausage maker attachment on my Kenwood.
I have never seen them in the supermarkets here. I would go and ask the butcher at a shop where they actually make in house fresh sausages, like Choitram or Spinneys, perhaps the butcher could guide you or sell you some skins.
