Just my personal experience - when I used the supermarket liquid food colours to colour the fondant, I was up half the night trying to achieve the right balance by adding more and then more and then some more sugar as the liquid made the sugarpaste too sticky.. In the end, not worth the hassle and the headache and the time spent... In my hard-earned experience, the gel food colours make colouring fondant a cinch.. certainly if you want to get the really vibrant colours, then yes, it's a bit rubbish and the gels take the edge, but if you're just doing a spot of home baking and can be variable, then there's nothing wrong with the supermarket ones. I managed to get Barney Purple from supermarket ones, but it does take a bit of skilled colour mixing and my hands were pretty purple by the end of it! At least all the granite worktops here are good for kneading the fondant!

As it is, the liquid food colouring found in supermarkets is a no-no when colouring fondant. Of course it's ok to use the supermarket stuff! You just need to be aware, as you say, that you need to balance it with more sugar and that you won't get the psychedelic colours the gels can achieve.

Remember fondant is only sugarpaste so the more liquid you add, the stickier it becomes and more difficult to work with. As it is, the liquid food colouring found in supermarkets is a no-no when colouring fondant. Instead you must use gel food colouring (you can find this at Tavola's stores - Wilton brand). A dab of gel colour goes a long way.. Just apply colour to the fondant with a toothpick head and knead to evenly spread the colour - 2 or 3 such applications should leave you with a very nice and bright coloured fondant ball. As for flavoring - I have never flavored my fondant, but I suspect if it is liquid flavoring, the same rules would apply. So search for a dry flavoring like the vanilla flavor powder found in supermarkets for flavored fondants..

Carrefoure & spinneys both have a big selection of food colorings in their baking sections so I am pretty sure you will be able to get from most supermarkets
