As it's their 23rd visit they've probably done more than most of us here! Perhaps they just want to chill by the pool and enjoy the fine weather? Took my ILs last month up the Burj Khalifa; played some golf; took them to quiz nights at AR and Emirates Golf course; went to Polo Club to see the horses and have a drink.
Second the Sheikh Zayed mosque in AD, guided tour at 10:00, very interesting question & answer time after
If you go to Al Ain, drive up Jebel Hafeet for view, Hotel Mercure at top for lunch, at bottom is Green Muzabarra (sp?) very green colored hot springs
Also in AD - on Yas Island you can drive go karts and possibly race car on the F1 racetrack (haven't done it, read about it)
in AD - 747 jet flight simulator at Al Bateen Airport 02 412 2222 (haven't done this yet either)
AD - Falcon Hospital - really interesting
Sharjah - the Museum of Islamic Civilization is really interesting www.islamicmuseum.ae
Sharjah - Al Mahatta Museum - 06 573 3079 it' a musuem all about the history of aviation in Sharjah. They have some old airplanes you can go into and a great film from the 1930's showing the daily life at the airport back then (we had to ask for the film to be shown) If your Dad is really into aviation there are a lot of old airplane parts and related stuff, there is a section on modern flight, then a whole wing which is basically a commercial for Air Arabia so you can skip that part.
Ajman - museum/fort
I was about to suggest the same Jabal Hafeet and Yas Island ... you might also want to look into Dibba or Khorfakhan ... nice beaches if that's their thing
I've not been there but I think going to Sir Bani Yas island in Abu Dhabi emirates could be interesting:

What about Al Ain wildlife park and zoo. The paradise gardens have recently re-opened and are apparently in full bloom just now (www.alainparadisegardens.com).
