Any feta recipes for dinner please?

I have some feta I need to use tonight and was thinking of something easy: either stuffed peppers or a risotto of sorts. Any suggestions or recipes out there? I have googled, but didn't find anything inspiring. Needs to be vegetarian.

Feta and beetroot salad. Grate 2 beetroots and one carrot - dress with honey and mustard vinegarette, mix through tasted pinenuts and chopped parsley and cubed feta. IF you are grating beetroot by hand wear rubber gloves or you will have pink hands for days <em>edited by Izzy99 on 06/01/2011</em>

[b'>Tuna & Feta Risotto[/b'> 1 tbsp oil 2 onions, diced 2 cloves garlic, crushed 180g arborio 1/4 cup white wine 500ml chicken stock 1 cup spinach, diced largely 200g can tuna in springwater, drained 60g feta cheese, diced 1/4 cup fresh parsley, chopped 10 sun dried tomatoes, drained from any oil, sliced Heat oil, add onion and garlic, cooking until softened. Stir in the rice and wine, continue stirring until wine has evaporated. Stir in the stock, half a cup or so, at a time. Cook over a low heat until it's all absorbed. When the rice is cooked (approximately 20 minutes), stir in the spinach, tuna, feta, parsley and tomatoes. Cook gently until the spinach has wilted. I've run through that pretty quickly hoping you have risotto experience. If not, just add more stock until the rice is cooked, use a good pot, and stir as you're getting other ingredients ready. This business about stirring constantly I think is over-rated, if you have a good pan then it's not going to stick or go soggy. I hope you like it, despite being a carb based meal I like the fresh and healthy taste the particular ingredients provide!

How about in couscous....really easy and so tasty for vegetarian. Add fetta, 1 red pepper roughly chopped, cucumber chopped (as much as u like), 1 tablespoon basil pesto and toasted pine nuts to couscous made in veggie stock. Divine!
