1 cup of milk plus one tablespoon of lemon juice or vinegar, stir it in, leave it for 10+ minutes and then stir again and you have buttermilk. You can also buy laban (the one in the milk section) as an approximation - it's a bit thicker but really nice when a recipe calls for buttermilk.
