Anyone have a great recipe or idea for the filling/icing of a chocolate cake? Need something special for DH's birthday cake.

For two round layers, slice the cakes in half (use a very sharp bread knife). Plate the first layer, top it with Nutella Place 2nd layer, sprinkle it generously with Gianduja liqueur. top it with about 100g of hazelnuts toasted and folded into Nutella Plate the 3rd layer, also sprinkle and top it with Nutella Melt around 200g of best quality chocolate in about 200ml of double cream, wisk in 2 tbsp of the liqueur, if using. When cool (but still very liquid), pour over top of cake, let it run down the sides. Sprinkle top of cake with toasted chopped hazlenuts.

If you are making a round cake use Caramel Treat for the middle. If you can't find caramel treat buy some condensed milk but it in a pan of boiling water for 2 hours. You will need to keep topping up the pan of water. And be very careful, the can will be very hot! Then for the topping melt 1 (or 2 slabs, depending on the size of cake) slab of 200g whole nut cadbury chocolate and 30ml (or 60ml if using 2 slab of choc) over a low heat and pour over the cake. Delicious!

Box of Betty Crocker works a treat too! But really it's hardly diff to make a cake is it? Or maybe it is? And for really special cakes go Delia or Wikkid.

I have a fantastic recipe! You make it with Coke .... the stuff you drink, not sniff ;o) Besides, I think Coca Cola will be easier to come by in Dubai :oP Here it is: Ingredients 250g self raising flour 300g golden caster sugar 3 heaped tbsp cocoa generous pinch bicarbonate of soda 250g butter 250ml Coke 125ml milk 2 eggs, beaten 5ml vanilla extract For the topping: Double quantities if you like a thick frosting 100g butter 2 tbsp Coke 2 tbsp cocoa 200g icing sugar To Serve: caramel chocolate bar (king size) a splash of double cream warm water 2 tbsp mini marshmallows (optional) Method 1. Heat the oven to 180C. 2. Sift the flour, sugar, cocoa and bicarbonate of soda into a bowl. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla. 3. Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter). Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping. Put the butter, cola drink and cocoa into a pan and melt slowly. Bring the mixture to the boil and then pour onto the icing sugar. Beat until smooth and pour over the cake while still warm. Cool the cake in the tin. 4. Serve with the sauce, made by melting the chocolate bar gently in a pan with a splash of cream, you may want to add a little warm water to achieve a pouring consistency, stir in the marshmallows if using. The sauce is rich and sweet, as is the topping, you may want to serve with one or the other rather than both..

I use either a simple butter cream, ie butter and icing sugar or i whip up egg whites and add icing sugar for a royal icing. Add coco powder if required or vanilla flavouring. Nutella or caramel.

I swear by Martha Stewart's Swiss Meringue Buttercream recipe. I mostly use it for cupcakes -- holds its shape beautifully -- but it would be lovely on a big cake as well [the chocolate 'version' is at the bottom of the recipe in the link below'>. http://www.marthastewart.com/recipe/swiss-meringue-buttercream-cupcake-book Failing that, nothing beats a great chocolate ganache. My recipe: 1/2 lb. bittersweet or semisweet chocolate, finely chopped 1 cup heavy cream [more as needed'> granulated sugar [optional'> Place in the chocolate in a medium sized heatproof bowl and zap on LOW in the microwave for a couple of minutes or until it's starting to melt. In a small saucepan, bring the cream up to a boil, turn the heat off, then pour the hot cream over the chocolate. Whisk gently until the chocolate has melted completely. The sauce should be a smooth and glossy consistency. If you're using a bittersweet chocolate, the ganache might be a little too thick. Add a bit more cream, a tablespoon at a time to thin it out. You might want to add a bit of sugar as well to sweeten it a bit more. You can either pour the warm ganache onto the cake straightaway, or wait till it has thickened [as it cools'> so you can apply it to the cake with a palette knife. Easy peasy.

I hear Betty Crocker is the one to call on ;) lol... love the response. I would second Betty Crocker if you don't really know much about icing cakes. Pilsbury is also a good option. Or maybe just whip up some fresh cream, slap it on and break some flake on top of the cream.
