Do you know easy ways to do simple but tasty cupcakes? don't forget the toppings , I guess it is called "the frosting" !! haven't done any cupcakes before , but lately my boy tried them and really loved them, so its time to baking some!! SO, RECIPES please...

I use the following as it is easy to remember & multiply. 50gr butter (unsalted), 50gr caster sugar mixed until light & fluffy, add 1 whisked egg, mix until fully blended. Add 50gr self raising flour (or 50gr plain with a 1/4 teaspoon bicarb of soda) and mix until blended. Put into cases (about 3/4 full). Cook for 12 - 15 mins at 180C. I have vanilla pods in one of my pots of caster sugar to give it flavour. Sometimes I use ordinary caster sugar and mix in a dash of lemon juice. If you want chocolate cup cakes, replace 10 - 15gr of the flour with cocoa powder. My butter cream is equal amounts of butter (unsalted) and icing sugar beaten well. If I am piping the butter sugar I use it at room temperature and it holds well. My DD has discovered the best bit about making cupcakes is eating the raw batter. It is an easy recipe!!! thank you! mostly I'll be trying it real soon :) .... my DS's best part is eating the chocolate chips!!!

I actually made some cupcakes today and they turned out great.
