I am going through this presently. Fairly straight forward case (one would think!) - 14 months passed since the process has been initiated and it is still not over. I hired a lawyer and had a Dubai Courts approved interpreter whenever felt my employer may take advantage of being fluent in Arabic.
It is long, costly and frustrating process.

We went to our consulate and asked for advice on legal representatives and they gave us a list of local solicitors for us to speak to and we chose one from them. As the others have said it depends on the individual case how long it takes, depending on the result and whether you or the other party appeals, and it's very expensive.
I agree with Chocs01 - a friend of mine went in to the Courts today with employer and it was all settled in the morning. Just be careful if you don't speak Arabic and they (employer) does - you will find yourself with the disadvantage of not speaking the language.
That's why it's important to get legal representation that has Arabic speakers and someone that is good at this sort of thing.

Basically how long is a piece of string. A friend took his former employer to court and has only just had it all settled, more than two years it's taken. Be prepared for the long haul and massive expense! You really need to weigh up whether it's worth it or not.
