For veggie cutlets: take mixed vegetables like carrots, peas, bean sprouts and potatoes. Boil them until soft and then mash them. Add salt and pepper to taste. Make vegetable patties and coat with whisked egg and breadcrumbs. Make a dozen or more at time and freeze on a tray. Defrost and fry as needed.

Thanks homegal you are a champion!! Good idea about the bread cut-outs. What do you mean about veggie cutlets? not sure I know. what juices do you buy that have more pulp and are not from concentrates? mmm, mushroom rice, got a recipe? Thanks again for the ideas!

Couldn't finish my post earlier as something suddenly came up. I try and make sure in every snack box there is a variety that includes veggies, fruit, a treat and a main meal. Include water and juice / milk. For juice, try and buy the ones with less sugar and more natural pulp type juices instead of the concentrates. Sandwiches can also be in the form of pinwheels, different breads provide variety. If you use a white bread and a brown bread on the same day, you can cut out a shape from the center and pop the shape in to the sandwich with the other colour. Hope that makes sense. Basically, white bread cut out goes into brown bread and vice versa. Other options - French toast, Grilled sandwiches, Cutlets are a great way to get kids to eat veggies. These can be made in advance, frozen and then fried / baked in the morning. Pasta / noodles also can be done in a variety of ways. White / cheese sauce, tomato sauce or plain boiled with veggies / meat balls / ketchup. Different colour / shape pastas. Rice - mushroom, peas, tomato, sausage etc. Ok, I've to run away again. Hope all the responses you've received are good enough to get you started.

All of what Homegal has put looks great! but beware nutella is often a banned thing at schools and nurseries... No nut policies.. and that extends to all kinds. Check out their policy on this just to be sure. My kids' favourite sandwiches are Peanut Butter... which is of course of limits for the lunchbox! They have all sorts of things in their sandwiches at school though as homegal's list... The other thing is cheese spread. Mine just love Pasta or baked beans in the lunch and have no problem eating it cold. Also Cheese sticks - Bega ones are nice, or La vache qui rit (laughing cow) chese triangles. The trick is to teach them to open them!

Try Daiso in the Oasis mall. They have all kinds of nifty Japanese lunch box things. Picks, cookie cutters, different paper cups, wax papers to fold around food etc. etc.
