A quick and tasty soup...

Hi ladies .I woke up today to find myself sneezing and coughing and having a mild fever. Not feeling very well to be honest and am stock at work till late.
I need to make myself a quick soup once I get home and then try to have rest. The problem is that I am a perfectionist when it comes to cooking and the soup that I make needs whole lot of vegetables and long preparation.Not really in the mood for long cooking and standing by the stove.
Can you suggest a quick but tasty soup?? PLEASE

Mushroom Soup. 4 packs of mushrooms 2 onions 2 cloves of garlic 2 cubes of chicken stock Water Put it all in a pan boil it then wizz bang it and add some creamwizz bang? hmmm

Onion soup - chop white or brown onions, fry in butter in a large saucepan, add a tbsp of flour and stir, add veg stock and simmer for 30 mins. Add a grilled slice of frenchbread with cheese - yummy

If your feeling ill there is only one soup that will do...... ingredients serves 6 to 8 1 large chicken, about 3 pounds, with giblets( optional) 1 large onion, stuck with 2 cloves 2 carrots, sliced 1 bunch (about 8 ounces) fresh parsley 2 large white turnips, quartered 1 stalk celery, coarsely chopped 1 teaspoon salt 1/4 teaspoon white pepper method 1. Scald the chicken by pouring boiling water over it inside and out. Put the chicken into a stew pot or Dutch oven. Add water to cover and place pot over high heat. Bring the water to a boil, skimming off the foam as it accumulates. When the water boils, reduce the heat and add the vegetables. Cover the pot and simmer for 3 hours over very low heat. 2. Remove the chicken from the pot and serve it separately or cut it into serving pieces and add it to soup just before serving. 3. Strain the soup, discarding the vegetables. Wipe the surface with a paper towel to soak up excess fat. Or, better still, cool the soup, refrigerate it, and remove the fat which will have solidified on top; then reheat soup.

Lentil soup 1 cup of red lentil + 1 oion cut into 4, boil until soft for 30 mins, add little salt, pepper & cumin. , then blend, & boil again until it's thick & creamy.

carrot and ginger soup boil a bunch of carrots in a veg stock. when u food process put a couple of bits of ginger (to your personal taste) quick and easy, but the ginger is also therapeutic for colds. u can add a tsp or so of turmeric for antibiotic qualities if u wish super tasty edited by Clever Bubbles on 06/01/2011 for ridiculous amounts of spelling errors! <em>edited by Clever Bubbles on 06/01/2011</em>

PLEASE Prep time: 10 mins Cooking time: 30 mins (you can leave it longer if you wish) Ingredients 2 x Carrots 2 x Onions (small) 2 x Celery Sticks 3 x garlic cloves 1 x can chick peas 1 x can cannelloni beans 1 x can red kidney beans 1 x stock cube 1 x can plum tomatoes Green Pesto Bacon pieces (if you like) 1. Slice carrot, celery, onion and garlic 2. Put a splash of olive oil into a pot, and put the above in the pot on a low heat to soften 3. Put the stock cube with 2 liters of hot water and once the veggies have softened pour the stock in 4. Get the can of tomatoes and blend them a little, and fill the empty can with water and add it to the tomatoes, then pour them into the pot. 5. Get all the beans and chick peas and pour them into a dish and rinse them, then ad them into the pot. Leave it to boil, for half an hour or longer if you wish, and then when you're ready fry some bacon (if you fancy it) and then put the soup in the bowl and then put a teaspoon (or more if you like) of pesto on the top of the soup, and put some bacon in and you're done! <em>edited by AdviceSeeker on 06/01/2011</em>

Spinach and nutmeg Saute an onon (garlic optional) till soft, add a couple of bunches of spinach and chicken stock - when spinach soft blitz and season with nutmeg S&P - can also add cream if you like.

In a little bit of butter/olive oil, press some garlic and then saute some onion and spinach. Pour some skimmed milk, let it simmer and then puree it. Once pureed, put it back on the stove and add more milk... as thin or thick as u want. Season with salt, pepper and any other herb seasoning u like.

Very roughly chop up whatever veg you have around, (if you are going to the shop then get celery, carrots, onions, and 2 or 3 red, orange or yellow peppers) add a stock cube (I like beef, but chicken or veg is fine), definitely add a couple of garlic cloves, and a tin of toms, boil for 10-15 mins and then blitz. Simple, easy quick and very yum. You can also add some creme fraiche or even cream if you can afford the calories (or just don't care) if you like your soup creamy.

Brocoli and stilton. take off the florets and set aside - chop up the stalks and saute with an onion (garlic optional); add the florets and chicken stock (or veg if you must) - cook till all brocoli tender, blitz wtih hand held thingy and crumbly in soome stilton to taste... if you want it to be creamier - add soem creme fraiche or double cream. Season with S&P

1 portion pumpkin / butternut, 1 stock cube, 1 small onion, 2 large tablespoons low fat/normal philadelphia. Put pumpkin, chopped onion and stock cube in a pot of water and boil until pumpkin is soft. Use hand blender to "gzhish" until smooth (dont empty the cooking water out). Add philadelphia and gzhish again until mixture is creamy looking. Serve with warm bread :) Hope you feel better soon! Note: Can do this with any veg really. Just dont use fat free philadelphia as it doesnt really cream well.

Cauliflower and leek soup. Boil the cauliflower and leeks till soft Put them in a blender, blend till smooth Voila... creamy yummy soup.
