Thankyou everyone for all suggestions. Just drew a blank when I read recipe. Will add to the 'at home' shopping list too.

Just for info - last time I was at Barracuda, I went into the deli that has opened in the grounds. The lady said they are going to soon bring WWV in from S. Africa as a lot of people have been in asking for it. I for one will be stocking up !

Apple cider vinegar, rice vinegar, white vinegar... unless the recipe needs balsamic, most vinegars taste pretty similar...

you can also use grape vinegar if you have it :) You definitely cannot omit it from the dressing!

You need the vinegar to add acidity to the dressing - if you don't have the vinegar suggested - use balsamic/ apple cider vinegar or lemon juice.
