Tomatoes over taking my fridge.

Our tomato plants have gone mad this year, the salad bit in the fridge is nearly full, I dont want them to go to waste and there is no way i can eat all of them, has anybody got any recipes on what to do with them?? Sauce? Dried? roasted? I dont know please help. TIA.

[u'>TOMATO AND BASIL SOUP[/u'> 1 tablespoon olive oil 1 large brown onion, chopped 2 garlic cloves, crushed 300g potatoes, peeled and chopped 600g tomatoes, chopped 2 tablespoons tomato paste 3 cups chicken or vegetable stock 1/4 cup fresh basil leaves Heat oil in a large saucepan over medium-high heat Add onion and garlic Cook, stirring, for 3 minutes or until onion has softened Add tomato and potato Cook, stirring, for 5 minutes Add stock Season with pepper and cover Bring to the boil then reduce the heat to medium-low Simmer for 15 to 20 minutes or until potato is tender Set aside for 5 minutes to cool slightly Add basil Blend in batches until smooth Serves 4 (but you could always up the quanities and freeze portions) [u'>HOMEMADE TOMATO SAUCE[/u'> [i'>(Like ketchup not pasta sauce)[/i'> 8 large ripe tomatoes, quartered 1 large red onion, cut into wedges 1 tsp balsamic vinegar Freshly ground black pepper Preheat oven to 180°C. Arrange tomato and onion, in a single layer on a lightly oiled baking tray Roast in oven for 1 hour or until soft and lightly browned Set aside for 15 minutes to cool Process in a food processor until pulpy Add the vinegar, season with pepper and process until smooth This will keep in the fridge in a sealed bottle or container for 2 weeks. Great with roast meat or as a BBQ condiment.
