I was told (by the time I got to #3) to pump off the first bit of b/milk before letting baby latch on. They got 'full' on the fore milk as I seemed to have lots of quantity but didn't get the quality because they were full of 'skinny' milk.

The fat on BM is often only a couple of millimetres on top of a pumped bottle. The rest ALWAYS looks watery. Obviously it's impossible to comment accurately on your situation via cyberspace, but it is EXTREMELY unlikely that the "quality" of your BM is the problem.
I can personally recommend Dr Delphine Dupuis, but see anyone qualified, please.
Having just read what you wrote on another thread I thought I'd link these two together. AP I'm not sure who is out there telling mums that their milk should settle to 1/3 fat on top but truly that is just not the case.

edited to add, an excess of foremilk can happen with cases of oversupply and babies can get "lactose overload" as a result but to big a gap between feeds, poor latch etc is a more likely explanation for lack of weight gain in a breastfed infant.

I went through this with all three of my children, it was Paula who actually diagnosed me with it and helped me deal with it. I had to have tests and stuff it wasn't just by looking at my expressed milk. Baby no 1 had to be supplemented with formula. Baby no two was latched on continuously all day until she was a year old, she had to feed for 45min stretches on the hour to get enough hind milk, she wouldn't take a bottle so it was purely on me to make sure she got enough fat, she was miserable and extremely hungry all the time. Baby no 3 I had even less fat than the other two and was told to put him on to formula. He was 2 weeks old and dropping weight quite rapidly. I felt really guilty at first, but he's such a happy satisfied baby that I wished I'd put the other 2 on formula from the beginning. It would of made all our lives less stressful. I was on a bucket of vitamins, oils, high protein and good fat diet but it didn't seem to make a difference to the fat content or quality in my milk.

congratulations! I dare to say that there was nothing wrong with your milk (provided you have a good diet - and it looks you do and you are healthy). I reckon there may be other reasons why DS was not putting on weight (how much was he putting on weekly?) was he dropping off of WHO charts?
If he was putting below 120grams/week than I would look at his suckling technique; was he latched properly? was he staying on the boob long enough to get hind milk? was he having enough wet and soiled nappies? Was his poo mustardy? If baby is not getting enough hindmilk poo may be watery.
To put your mind at ease I would recommend to see a lactation consultant. I have seen Paula Miller at the time and she was fab.

Worth to mention that breastfed babies tend to slow down their growth by 2-3 months.

With DS1 I found at 10 weeks that I had watery milk supply ... No fatty goodness which lead to the discovery that the reason my boy kept crying and not putting on much weight was coz he was blooming starving poor guy. I tried to increase good oils in my diet trying to increase the fat milk and found that loads and I maen like 1kg packet of peanuts over 2 days would give me about 15ml in 3 expresses of fatty milk in 120ml express. DS2 is due in April... Most likely march really... And I'm just wondering if anyone else has experienced the watery b**b milk before ... If so, did you try anything to increase the fat content, with you subsequent children did you do anything different, did you have fattier milk second time around?
Just wondering what I could do now to help. I have increased good fats early... And more of it than what I had when pg with ds1. I'm eating loads of almonds, avocados and cooking with good olive oil or cocconut oil.
I have tuna about 3-4 times a week, admittedly canned but good stuff. I know I could eat salmon perhaps once a week but I've really gone off it because last few pieces I've had have not been fresh I don't think, waaaay to seaweed / sea strong taste which just the thought of makes me gag.
Ay other suggestions? Might post this on health and main forum too.
