You could pour it into a plastic bag (check for holes beforehand!) or a plastic/ glass jar with screw-on lid, then dispose in trash.
Re-use depends on the type of veg oil. Corn oil doesn't break down into offensive odors as easily as canola oil.
you could store veg oil intended for re-use in a cold, dark place, including the freezer, for up to 1 yr.
