am leaving Dubai in december, have made a list of what things need to be cancelled, but has anyone heard from friends some things that they may have experienced that they weren't expecting and suddenly had to do at the last moment?

There are a million things, but one I hadn't considered is that Showtime and Etisalat need quite some time allowed to finalise bills etc. Showtime weren't too bad (a week from memory) but (useless) Etisalat needed almost two weeks...although I've no doubt that depends on who you speak to at the time. ;) If you are vacating a rented villa or apartment, maybe see if you can move into temp accommodation for at least a few days before you are leaving the country. Get everything sorted with the Landlord and any money owed to you IN YOUR HANDS before you hand keys back etc.

If you are leaving anything large outside for collection / recycling get it picked up before you leave as there is a charge and it would be unfair to dump in on the next tenant.
