I've had the goose, which I bought fresh for last Christmas and then couldn't cook because I had to dash home at short notice, in my freezer for almost a year. Is it safe to defrost and cook it on Christmas Day, or should I just give it up as a bad job?

Poultry should be prepared within 24 hours of purchase or stored in the freezer. Poultry may be stored in the freezer (0°F) for 12 months. http://pubs.ext.vt.edu/348/348-960/348-960.html

I don't think I would risk it I believe there is a 3 month guideline for Goose but happy to be corrected. Are there no freezing/defrosting guidelines on it?

Its fine .............. *thinks ...Scott of the Antarctic ... his food was frozen for years and they Tested and ate it when they found him* .. I think its fine .... goose is very fatty and will freeze very well .. does it have frost burn on the flesh ? if so .. Buy another one ..
