The cookie recipe calls for 55% cocoa chocolate (300g, 100g of which melted), I mistakenly bought 75%. I don't have time to buy more and now it will be too bitter. What can I do?? Please help!

This is probably too late but... 55% will be a bit sweeter and a little more oily than 75%. I only ever cook with 75% or even sometimes 80% as it's less oily. It should be fine in a recipe.

Do you have any milk chocolate lying around? If so, chuck some of that in! Maybe melt half and half. If not, im sure it will be fine! Wouldn't have thought it would make that much difference?
