Hi,
Just thought of sharing this reipe for homemade Pesto.It's really an easy one...great with pasta,for sandwiches,even over grilled chicken...Just made some for some appertizers this evening...
INGREDIENTS
50 gms pinenuts
6 cloves of garlic
75gms freshly grated parmesan cheese
1 cup basil leaves
3/4 cup olive oil
1 tsp salt
1/4 tsp freshly ground black pepper.

Just put all the ingredients into a blender...maybe you'd like to drizzle a little more olive oil on top...helps preserve it a little longer and more spreadable as well...hope you enjoy making it as well.

I make a vegan/non dairy version.... Use nutritional yeast instead of parmesan. It's not quite the same but still yummy.

I would only use half / third of that amount of garlic.... will totally overpower the other flavours and all you will taste is garlic....... I used to work in a restaurant in London and just double checked my recipes from back in the day and for that quantity of basil / pinenuts we used 2 -3 cloves of garlic....

My kids love pesto ... Now haven't a clue about making stuff can I leave the pine nuts out of it ? Or will it be odd as was gonna make it for my 2 yr old .. Tia
