My maids visa is up for renewal, which we are not going to renew. I know we get 30 days after the visa end date to cancel the visa, but does she then go on a 30 day visit visa?

You don't have 30 days grace period to cancel, you have 30 days Grace period after cancellation to either send her back home or find a new sponsor And no she can't get a visit visa, she doesn't get a visa from airport / exit , she will have to leave once her grace period ends
