I follow lots of International food blogs and the one thing thats common now a days due to thanksgiving is food made of pumpikn. I c lots of cakes and cupcakes made of it. everyone has their own recipe. Im curious how it tastes and would like to make it. I make carrot cake and cupcakes but havnt tried one with pumpkin. Could anyone kindly share ur tried and tested pumpkin cake/cupcake recipe .

Tinned pumpkin is in Park and Shop on Wasl....... Much easier but kudos to the cooks who use the real deal.... Very good with cream cheese frosting....google that- super easy

You can cook fresh pumpkin. You will need to remove the outer shell and seeds, similar to cutting up a cantaloupe. Cut the pumpkin into cubes and boil in water until tender. After it has cooked you will need to let it drain well and cool. Before using squeeze as much water out of it as you can. You can then substitute same amount of cooked pumpkin for the canned stuff. You will however, need to adjust the spices a bit as I think the stuff in the can comes with quite a bit of spices and is pretty sweet. Super easy

Thank u so much dubaichick11 for the recipes. where to get tinned pumkin could u plz tell me how to proceed if i want to use fresh pumkin instead? as im hesitant to use the tin one. Thanx again

Just found another tried and tested recipe for pumpkin bread / muffins: Mix the following: 1/2 cup oil (veg or sunflower) 1 cup pumpkin (cans not pie filling) 2 eggs 1/2 cup water Add the following: 1 2/3 cup flour (all purpose) 1 1/2 cup sugar 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp all spice 1/2 tsp ground cloves 1 tsp baking soda 1/4 tsp baking powder 3/4 tsp salt Mix all together until well blended Pour into greased muffin cups / tray or loaf pans (this makes 2 small loaves) bake at 350oF until test as done (30-40 mins) Freezes really well. This is a lovely lovely recipe. X

Hi Naiyyar I have made the following recipe loads of times and it comes from the back of a tin of Libby's 100% pure pumpkin: Mix the following in a small bowl: 3/4 cup sugar 1/2 tsp salt 1tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground cloves Beat together: 2 large eggs Add to the beaten eggs the following: the sugar spice mixture above 15oz tin of pumpkin 12fl oz tin of evaporated milk Pour into: 9inch deep dish pie case (you can get graham cracker ones from the shop or make a pasty one yourself) Bake: 425oF for 15 mins, reduce oven temp to 350oF and continue baking for 40- 50 mins or until a skewer inserted near the centre comes out clean. cool for 2 hours and then serve or refridgerate. Enjoy!!
