My husband is so picky with vegetables I have to be a, bit sneaky... I usually blend veggies into tomato bases sauces... You can chop some veggies into small pieces, sautee or stream till done. Then blend in blender/food processor with a small amount of water until you can't recognize the veggies at all... Then add to your sauce ingredients so it blend into the tomato sauce. I have also done this with a red pepper/capsicum based sauce. My husband has no clue about it! You can also add low fat cream cheese to the sauce to make it creamy. edited by Abaddon on 20/10/2011

My kids only eat it if I make a cheese sauce. Kind of defeats the healthy purpose, but I count it as 1 of my 5! I just make a quick bechamel and add grated cheese. Keeps in the fridge for a few days.

This goes with everything, also good with pasta salad. 2 tbsp olive oil, 1 tbsp balsamico, 1 tsp dijon mustard, 1 tsp honey, finely chopped garlic, (can leave it out for DD) salt & pepper.

A little bit late I'm afraid ... I like a little sesame oil on my steamed veg, and/or soy sauce. Mustard/olive oil might also work to pep them up a bit.
