Too many lemons!

I bought a net of lemons as they worked out cheaper than buying 3, but I hate waste - I've used 3, going to make lemonade with 4 but still have 10 left ... what to do?

If I squeeze them how long can I keep the juice in the fridge? I can also slice a couple for those sneeky G&Ts but if I do that to all of them it will keep me going until at least Christmas and I'll have bashed them in the freezer by then .... any suggestions??

Slice them up and stick em in the freezer. Great for your G n T's.

I put excess lemons in the fridge whole, as they are, they are perfect for juice once thawed.

oooo thank you all, just googled a lemon curd recipe - DS loves lemon curd in victoria sponge ..... thanks again!! Will try the perserved lemons too xx

ooo, lemon curd! That's such a winner... Lemon meringue pie?! Lemon drizzle cake? Fish in a lemon sauce this evening... or Greek spinach rice (rice, with onion, spinach and lemon juice...) You could also freeze some halved slices in water so that they are cute G&T ice-cubes? Same for the Pimms, really...

you can freeze the juice in ice cube trays, or make lemon honey.....
